Simple Stuffing Meat Loaf

Monday night is family dinner night around here. We usually get together with Jesse, Andrea, and my nieces to give the kids a chance to play. This week I had a pasta dish in mind for dinner. I only needed one ingredient so I decided I would run to the store before Logan's afternoon nap to grab it. I got out to the car with a toddler in tow, and realized that we had no car seat. We had done some car seat switching over the weekend and Dan had forgotten to leave a car seat when he left for work.

So plan B. I had to find something that I had all of the ingredients for. It was slim pickings because I hadn't gone grocery shopping in almost a week. So I revisited my Pinterest recipe board and had just about the same problem with every single recipe... missing one ingredient. Uh-oh.

Plan C. Wing it. I decided I would throw together the ingredients that I had at home and hope they turned into some type of delicious dish. I decided to go with a meat loaf type of meal. It wasn't really meat loaf I guess, because I didn't have the right ingredients to make any of the recipes online. Anyway, it turned out to be a big hit with the guys. It was pretty kid friendly and simple to make too!

Ingredients
2 eggs
1 box of stuffing mix (I used about 3/4 of this one... 9oz)
1 can Cream of Chicken or Cream of Mushroom soup
1 onion
2 lbs Hamburger



  1. Slice and saute onions until soft. (I like my onions cooked and on the sweeter side but if you like a stronger onion flavor you could probably skip this step.)
  2. I rolled my stuffing mix out with a rolling pin to make the pieces smaller (a food processor should work too).
  3. Mix eggs, stuffing mix, cooked onion, and half of the cream of chicken or mushroom soup together in a bowl.
  4. Add the meat and blend well.
  5. Form a loaf and top with the other half of the cream of chicken or mushroom soup.
  6. Bake at 375 for about 50 minutes.

After. Meat loaf isn't the prettiest dish around but it was tasty. 



The stuffing added a lot of flavor. I served it with mash potatoes and asparagus. I used a large loaf pan and it fed five adults and two toddlers, with some left over. Since the ingredients are things that I almost always have in the house I am hoping my not-quite-meat loaf will help someone in a bind. I wanted to make sure I have it for future use too, because Dan has already requested it again.
