Logan is an eggs-for-breakfast kind of guy. I don't mind because they aren't difficult to make and I really love having eggs for breakfast too. He will take them just about any old way but he loves them scrambled with cheese mixed in. Like I said, I don't mind making eggs most days but once in a while on the rushed days I have tried (to no avail) the instant oatmeal packets. I can get him to eat some cereals, but I like trying new breakfast foods to add a little variety.
I was craving something different today so I decided to try some home made oatmeal and see if he felt any differently about that than the oatmeal packets. He has been on a honey kick lately. He asks for a piece of bread with honey on it at least once a day. That is how I decided to try this little mix of things....
To be honest, he didn't think it was the bee's knees. He did eat about half the bowl though, so in toddler world I say it was a success! I absolutely loved it and will be making it for breakfast more often. He has a bad reaction to cinnamon so I just added it to mine and it was the perfect warm breakfast.
Ingredients:
1 cup whole grain quick oats
1 3/4 cups water
1/8 cup honey
2 apples
cinnamon to taste.
1) Peel apples and cut into small cubes
2) Bring water to a boil
3) Add oats and reduce heat to medium
4) Add fresh apple cubes and let simmer for 1-2 minutes
5) Stir in honey & sprinkle with cinnamon
