Veggies

Dan and I both have trouble with making sure that we eat plenty of veggies. I like most veggies but just don't make a point to eat enough of them every day. Dan, on the other hand is very picky about what veggies he likes. Ever since Logan started eating baby food we have tried to make sure that he gets plenty of veggies everyday. We know that we aren't always great about it but are trying to change that for us and for Logan.

I saw a breakfast casserole on Pinterest and decided to go off of that idea but to make breakfast for the week using my new brownie pan. One of my Christmas presents from my mother in law was a square brownie pan from Pampered Chef. I just used what I had in the house but the possibilities are endless with this breakfast. The best part is that all you have to do in the morning is pop one in the microwave (would make a great before-school breakfast too). I initially decided to make them for Logan because he was getting sick of the same things every morning. He loves eggs and cheese!

I scrambled a dozen eggs in a mixing bowl (made 18 squares) and added some milk. Then I added a bunch of broccoli, spinach, and asparagus to make sure I was loading them with veggies. After that I added a bag of shredded cheddar cheese. You could also add feta, pepper jack cheese, ham, chicken, sausage, bacon, and so many other things. I filled the bottom of each square with croutons and poured the mixture over each one. I baked them at 350 for 20 minutes (I just guessed on temp and time so you could experiment with that). Logan loved them and Dan and I have been eating them for breakfast too. It is such a quick and easy way to get a healthy meal into him first thing in the morning.






I caught him off gaurd here but he ate one square and then wanted another one!
