Easy Dinner

I had chicken and spinach that I had to use up in the fridge last night so I was trying to think of something easy to do with it. I used a fillet knife to cut the chicken breasts in half.  I put the spinach in a glass mixing bowl. I also had a tomato to use so I cut that up and added it to the bowl. I heated it in the microwave for 2 minutes stirring once half way through. Once the mix was warm I added some mozzarella, feta, 1/2 cup sour cream and jalapeno peppers (sliced up small). I mixed it all together and placed inside the chicken breast. Then I sprinkled some parmesan cheese on top of it all. Wrapped it in Turkey bacon (I just didn't have regular bacon in the house) to help hold it together. I stuck some toothpicks in to hold it all together. It cooked at 350 for about 40 minutes and came out delicious. It was so easy and had a short prep time too. You could use whatever veggies/ stuffing you like best. If you like the bacon crispier add 10 minutes of broil time to it.
